6 VEG quick curry

What more can you want than a speedy Veg curry. Feel free to add: tofu, chicken or fish, I personally eat it as is and I LOVE IT!

Authentic 6 VEG impressive curry of butternut squash, courgette and Veg-it-up White Sauce. Unlike other curry recipes doesn't require long cooking times in order to enhance its flavour.

Instructions
  1. Cut open butternut squash
  2. Scoop seeds out and throw away or roast the seeds in the oven if you'd like them for another day.
  3. Peel the butternut squash and remove the skin, chop into bite size pieces and cook or steam in a small amount of water (enough so they don't boil dry) for the 15 minutes cooking time.
  4. chop both courgettes into small pieces, add to the pan with the butternut squash for the last 5 minutes of cooking time (after 10 minutes).
  5. Open the pouch of Veg-it-up White Sauce and stir in 1 tsp of hot curry powder, 1 tsp of ginger plus add any other favourite spices if you really like it hot. This allows the flavour to spread throughout.
  6. Once the butternut squash has softened and courgettes cooked enough, add the White Sauce and stir through, heat for a further 2 minutes.
  7. Serve with cooked rice or with naan breads.
Recipe Notes

Beware, flavours are magnified due to the veggies absorbing the spice so go easy at first, you can always add more spice later if required.
