12 VEG lasagne in minutes and no dirty pans to wash up

A healthy low fat, 12 VEG lasagne suitable for Vegans, that even meat eaters admit to loving.

  1. STEP 1 Tear open the pouch of veg-it-up Red sauce, Fill with tap water to the top of the pouch and mix.
  2. STEP 2 Add 2 large spoonfuls of the veg-it-up Red sauce and water from Step 1 (directly from the pouch) into the bottom of an oven proof dish suitable for 4 lasagne pieces. Add another 2 large spoonfuls of water into the dish aswell, this will prevent the lasagne sheets from sticking.
  3. STEP 3 Place 3 lasagne sheets into the dish, side by side, with no overlap, (break them) to fill any gaps if necessary.
  4. STEP 4 Layer half the raw courgettes and half the raw mushrooms on top to weight the lasagne down and to prevent it curling later, when in the oven.
  5. Sprinkle a tiny pinch of salt and pepper over the vegetables if you're allowed it and optional 1 clove of crushed garlic.
  6. STEP 5 Add a layer of veg-it-up Red sauce/water (half of what's remaining in the pouch) over the vegetables plus half a tin of tomatoes if using them and spread.
  7. REPEAT STEP 3 Add the final 3 pasta sheets without overlapping.
  8. REPEAT STEP 4 Layer the remaining raw courgettes and raw mushrooms on top (as before).
  9. REPEAT STEP 5 Add the remaining layer of veg-it-up Red sauce plus the rest of the tomatoes.
  10. STEP 6 Tear open packet of veg-it-up White sauce and spread all of it over the top of the dish.
  11. Cook for 50 mins in pre heated oven at 180°C/Gas mark 4
  12. I eat it without adding any topping over the veg-it-up White sauce but possible to sprinkle with nutritional yeast or cheese of your choice before cooking, if preferred.
Recipe Notes

Freezes and reheats very well, what it can sometimes lack in looks, it certainly makes up for in taste.
